Jamie’s chicken

This is a recipe inspired by Jamie Oliver… this is just a simple chicken dish……just normal not to fancy ingredients ,and it is easy to just whip up last minute. With this recipe you can kind of play around with what you like and what you don’t like putting in more or less

Jamie’s chicken


2 lb chicken thighs or legs

1 bulb of garlic peeled

2 big handfuls of cherry tomatoes

1 bunch basil leaves

5  red potatoes quartered

4 big glugs olive oil

4 tea salt

2 tea pepper

Preheat the oven to 350.First lay the chicken down at the bottom of 2 big skillets then add the rest of the ingredients on top dividing between the tow pans and then toss with the olive oil.Then bake in the oven for 1 1/2 hours. When it comes out of the oven smash the garlic cloves along with the potatoes and chow down.

Tip-Leftovers are excellent over angel hair pasta with olive oil and parmesan.

  1. Liza! I made this chicken for Jeremy and I last night. Looooved the sound of this recipe, especially it’s simplicity. Tasted so fresh and delicious; I’m so happy we have leftovers to try over angel hair pasta. Seriously love your blog!!! Can’t wait to try more of your recipes and learn from your expertise! (Jeremy and I still rave about the deliiiiicious pumpkin pie you made that we enjoyed at your house!)
