I love ice box cakes’s, and i was trying a recipe from barefoot contessa and i asked my mom to buy an ingredient from the store and she didn’t buy enough. And i made the chocolate chip cookies too thick and that is how my version of this cake was made. Mocha is a combination of chocolate and coffee, so you probably wont want to make this for a 5 year old’s birthday party. But its still delicious. Its my dads favorite cake. You can eat this cake right away or you can eat it frozen or you can eat it refrigerated, you can basically eat it when ever you want but since it is an ice box cake i recommend eating it refrigerated at least for a couple hours.

I know it looks like bread, its not, its chopped up cookies.
The delicious mocha mousse
2 cups cold heavy cream
8 ounces mascarpone cheese
1/2 cup sugar
1/4 cup coffee
2 tablespoons unsweetened cocoa powder
1 teaspoon pure vanilla extract
8 crisp chocolate chip cookies, chopped in to chunks
In the bowl of an electric mixer fitted with the whisk attachment, combine the heavy cream, mascarpone, sugar, coffee, and cocoa powder. Mix on low speed to combine and then slowly raise the speed, until it forms firm peaks.
To assemble the cake, arrange the chocolate chip cookies chunks at the bottom of a springform pan, covering the bottom as much as possible. Spread a fifth of the mocha mousse evenly over the cookies. Place another layer of cookies on top,followed by another fifth of the mousse. Continue layering cookies and cream until there are 3 layers of each, ending with a layer of cream. Smooth the top, cover with plastic wrap, and refrigerate or freeze overnight.
Run a small sharp knife around the outside of the cake and remove the sides of the pan. Sprinkle the top with the chocolate, cut in wedges, and serve cold And enjoy
