Chewy sea salt caramels

I love camels, but for some reason i never liked Weathers caramels so i decided to make my own. I thought that caramels were really hard to make they are actually quit easy, you just can’t walk into another room for 5 minutes. I found this recipe in a magazine and made a  couple of changes. Its almost easter and we put a couple caramels in little bags and went on a caramel delivery and gave a bag to a couple of our nabbers, and every body loved them. You can wrap these in cut little wax paper rolls, and you just want to eat all of them.

2 cups heavy cream

1/2 cup corn syrup

2 1/3 cups sugar

6 Tab butter, cut into chunks

1 tea vanilla

2 tea sea salt

Grease and line with parchment paper all the way up to the sides a 9 by 5 inch loaf pan (forget the loaf pan on the side of the picture above, that was a disaster). Bring heavy cream, corn syrup, sugar and butter in a large saucepan until the butter is malted and the sugar is dissolved, then turn the heat down to med high and stick in a candy thermometer and boil and stir every once in a while, when the temp is 240F or the soft ball stage turn off heat add the vanilla and pour into the prepared pan. Then sprinkle on the salt and let cool for 30 min to a hour. Then take your caramel out of the pan and cut into any shape you like, and wrap in wax paper.
