Makes 1 casadias (you could easily double or triple  it)

Ingredients:

1/3 shredded monterey jack cheese

2 flour tortillas

1/2 Tab butter

1 Tab pesto  (homemade or from the store)

Start by melting the butter in a skillet, and on med high heat, take one of the tortillas and but it on the skillet then add the cheese on top and let melt for a minuet. Then spread the pesto on the other tortilla and put it on top of the first one. When it is brown at the bottom (you can lift it up to check) give it a flip and let it cook for another  2-3 minuets until brown on the other side. Then take it off the heat and cut in to triangles, and enjoy.
