Strawberry and thyme mocktail

One day at my lake house my aunt and uncle decided to make 2 different drinks just for fun. My aunt made a mango pineapple one and my uncle made a strawberry thyme one. Every one like the strawberry one more because, because, it was just so good.

Me and my uncle. We made a variation with blackberriesIMG_1253

Inspiration from Real Simple Magazine

1 cup sugar

1 cup water

8 sprigs of thyme

1 quart of strawberries, hulled and sliced

1 1/2 cup of fresh lemon juice

Combine the sugar, thyme, and water in a small pot. Bring to a boil and cook, stirring occasionally, until the sugar is dissolved. Let cool and discard the thyme.
Combine the thyme syrup with the strawberries, lemon juice, and 5 cups cold water in a large pitcher. Chill for 30 minutes or up to 12 hours. Serve over ice, garnished with additional thyme.
